He explains the different aspects of AI, such as data analytics and data itself, and how it can be applied to monitor ecosystems functions. He also highlights the importance of looking at the sustainability aspect of the food system, as it contributes to 37% of global emissions. Finally, he talks about the European project on food called Switch which highlights the connection between technology and the food system.
